NUTRITIONAL EFFICIENCY ANALYSIS OF BAKERY PRODUCTS WITH SPECIAL FUNCTIONALITY
Abstract
The subject of this research is a comparative analysis of the quality and nutritional effects of bakery products with special functionality, of some representative manufacturers in Romania. Comparing Bongrana Sana Benexia and Savoria Toast Kornfit, both enriched with vegetable sources of ?3 and ?6, we can observe that despite the more balanced intake of ?3 and ?6 polyunsaturated fatty acids of the product Savoria Toast Kornfit due to the lower prices, Bongrana Sana Benexia enjoy greater accessibility to consumers, being at the same time, a valuable source of bioactive elements for body functionality. Comparative analysis of energetic, nutritive and economic efficiency of Dobrogea Benecol and Savoria Toast with wheat germ, reveals a superior special nutritional intake of the product Dobrogea Benecol, coupled with better efficiency of its functionality, proven clinically to reduce blood cholesterol levels, but the product accessibility level is minimized by its relatively high price. Nutritionally speaking Savoria Children Bread and Vel Pitar French Toast Kids are very close in nutritional value, both products being an important source of protein, fiber, carbohydrates, calcium and magnesium.
