THE EVALUATION OF NUTRITIONAL QUALITY IN SCHOOLS CATERING FROM ROMANIA

Abstract

In the context in which healthy nutrition, institutionalized nutrition and combating of childhood obesity are a strategic interest in improving the health of young people, this paper is constituted as a nutritional analysis of the quality of menus for school catering in Romania. An efficient system of products quality evaluation provided by the commercial and the social catering system can lead to optimizing the production processes, to improve the legal framework for beneficiaries and to support the education system for healthy food for schools and parents too. The paper is structured in two directions, first direction describe the principles of rational nutrition from schools on a matrix of nutritional quality indicators from the literature, identifying an optimal model of nutritional quality analysis, and the second direction is about evaluation of the menus quality offered in the school in some educational institutions in Romania. The results of the study provide the basis for developing a nutritional quality assessment system, based on instrumental food expertise that can support nutritional optimization of school catering products; improve the regulatory framework, increase operator competitiveness and community care for the “future of tomorrow”.
