METHODS FORMING SKILLS OF MANAGEMENT OF BIOLOGICAL RISKS IN BIOTECHNOLOGY OF DAIRY PRODUCTS BY MAGISTERS

Abstract

The relevance of the research is conditioned by the need to change approaches to the formation of common criteria and mechanisms for motivating the students' abilities and readiness to effect in non-standard situations. Students have had a social and ethical responsibility for made decisions "in real time". The existing approaches are obsolete, since mutations of extraneous biological objects in the technological processes of different types of products at enterprises occur faster than before Such a situation requires the formation of skills for students, which are necessary not only to identify and assess critical control points, but also to make the right decisions on managing biological risks in biotechnology of dairy products. The aim of this research was the development of a motivational and behavioural model for identifying the effectiveness of forming students' skills required for a competitive graduate of the university to actively participate in the production of safe dairy products. It forms in the process of interaction between students and teachers. The results of step-by-step formation of skills for studying the occurrence of biological risks in the biotechnology of dairy products from masters are presented. To do this, the masters offered interactive learning. It combined individual and group work to solve educational, cognitive, communicative, developing and socially-oriented tasks. The subject-subject interaction, where the teacher and the magister are subjects, occurred during the studying of the educational disciplines "Microbiological control of animal products", "Scientific foundations of biotechnology of dairy products" and "Bacteriophage in the dairy industry" through the use of an interactive learning regime, based on dialogue and cooperation of all subjects of studying. The research involved 45 magisters (average age 21-23 years) studying in the direction "Food of Animal Origin", the magister's program "Biotechnology of milk and dairy products" and "Food microbiology". We used the method of communicative technology, the Delphi method in combination with other methods. They allowed us to consider the development of a motivational-behavioural model and methods for diagnosing its effectiveness in the formation of competencies for magisters. Teachers and students created behavioural patterns and a sequence of steps to develop a strategy to exit from non-standard situations on the basis of individual assignments for students on the biotechnology of certain types of dairy products. The article presents the results of the formed skills of each student in one and several disciplines. Corrective actions on management of process of formation of skills both for group, and for the individual student are offered. Examples of application of the principle of integration of interactive methods are given. They contribute to more effective achievement of the goal of forming a specific skill, taking into account the individual characteristic.
